Simple Sweet and Savory Pickles
An easy pickle recipe made with salt, sugar, and rice vinegar. If you're like me you can painstakingly arrange them on a bowl for no reason for the 'gram and then proceed to eat them all in like 30 seconds. OCD organization of said pickles definitely not required, add them to gua baos, rice bowls, or any dish that needs brightness.

1 long English or persian cucumber
3 teaspoons of sugar
1 1/2 teaspoons kosher salt
1 tablespoon rice vinegar
1/2 teaspoon of sesame oil (optional)
Preparation
Thinly slice cucumbers width-wise and put into a mixing bowl. Pour in rest of the pickle ingredients and lightly stir to incorporate. Let sit for 20 to 30 minutes and up to overnight. That's it!
