Coca-Cola and Soy Glazed Ribs

What's more American than braising ribs in soy sauce and a whole can of Coke?! Coke and soy sauce was my dad's go-to marinade for meats, equal parts sweet and salty reminiscent of teriyaki and barbecue sauces from our favorite dishes like General Tso's chicken and sweet baby back ribs from Tony's Barbecue. Not only does the Coke give these ribs a deep caramel-y barbecue flavor, it also tenderizes the ribs and pairs so well with the saltiness of soy sauce. This recipe is a one pot dish, where the dry rub and wet marinade all get mixed together in a large pot or dutch oven that goes straight into the oven and is slow cooked to tender perfection. To fit all the ribs in one pot, just ask your butcher to cut the ribs into halves or thirds.

1 full rack of ribs, cut into 1/3's lengthwise
Dry Rub
2 tablespoons light brown sugar
2 tablespoons granulated sugar
1 tablespoon kosher salt
1 teaspoon onion powder
1 teaspoon freshly ground black pepper
1 tablespoon chopped fresh rosemary
1 tablespoon grated garlic (6 cloves)
1 teaspoon grated fresh ginger
Wet Marinade
3 tablespoons soy sauce
2 teaspoons honey
1 tablespoons black vinegar or balsamic vinegar
1 can Coca-Cola (12 fl. oz)
Toppings
Chopped scallions
Sesame seeds
Preparation
Prep the dry rub and ribs
In a large dutch oven, combine the brown sugar, granulated sugar, kosher salt, onion powder, pepper, rosemary, garlic, and ginger, and stir to mix well.
Chop the baby back ribs into individual pieces by cutting between each bone. Add the baby back ribs to the dutch oven of dry rub and massage each piece of meat with the dry rub until evenly covered. Cover the dutch oven and marinate for 30 minutes in the fridge.
Cook the ribs
Preheat the oven to 275°F. Add the soy sauce, honey, black vinegar, and Coca-Cola to the ribs and toss them in the marinade until mixed together. Place the pot into the oven and roast covered for 2 1⁄2 hours until the ribs are tender and falling off the bone. Remove the ribs from the oven. Transfer to a serving bowl and top with scallions and sesame seeds. Enjoy warm with a side of white rice!
