Caramel Apple Shaved Ice

The inevitable transition from summer to fall is only possible knowing the seasonal sweets that await, including my number one pick, the Costco pack of caramel apples covered in peanuts. With apples in peak season, I knew I just had to recreate the caramel apple as a shaved ice. I love that this dessert takes the typically hard and crisp caramel apple and flips it to become an incredibly fluffy bowl of shaved ice while still retaining caramel apple's greatest hits of tartness, sweetness, and nuttiness. I peel the apples beforehand, as I find the texture is quite gritty with the waxy skin in the shaved ice. I definitely recommend using a tarter apple like a Pink Lady or Fuji as it pairs nicely with the sweet whisky miso caramel that's drizzled over it.

1/2 cup brown sugar
1/4 cup whiskey
2 teaspoons white miso (or 1 teaspoon kosher salt)
Apples
2 apples, peeled

Preparation
The night before
Peel apples until they're fully naked! Place them in a freezer bag and freeze overnight until completely hardened.
Make caramel
In a small sauce pan add brown sugar, miso, and whiskey. Bring to medium high heat and continuously mix as it begins to cook until moderately bubbling and syrupy, about 3-5 minutes. Remove from heat, pour into a heat proof container, and set aside.
Assemble shaved ice
Finely chop peanuts. In a bowl, finely grate frozen apples with a microplane (if your hands get to cold, just place a paper towel between your fingers and the microplane) until you've filled the bowl. Add a drizzle of whiskey caramel over the shaved apple ice. Top with chopped peanuts and black sesame. Eat immediately!
