Sisig Egg and Cheese

Imagine, you walk into a bodega looking for the classic BEC, a breakfast sandwich that has fueled you, along with hundreds of thousands of New Yorkers, in your morning routine. A ritual of shoving crisp bacon, griddled eggs, and melty American cheese sandwiched between a kaiser roll into your New York mouth as you briskly head to work with your aggresively fast walking pace. But gasp! the bodega you walk into has been overtaken by Filipino aunties, and they've decided to replace the bacon with sisig! You exclaim, "how could you?! this is sacreligoius! A New Yorker would never!!" But as you scream and yell, the Filipino auntie shuts you up by taking a sisig, egg, and cheese and shoving it right into your mouthhole, the sandwich muffling your protests that suddently turn into moans as the sweet, citrusy pork belly oozes with delicious flavor complementing the savory egg and melty American cheese that you taste with every bite. And just like that, a new tradition of sisig egg and cheese comes into your life, tasting just as nostalgic as the original.

Egg
3 large eggs
Kosher salt
1 slice American cheese
2 slices white bread or kaiser roll
Sisig
1/2 pound pork belly, diced
1/2 teaspoon kosher salt
1/2 red onion, diced
1 jalapeño, diced
Juice of 1/2 lime or 1 calamansi
1 tablespoon soy sauce
1 1/2 teaspoons brown sugar
Cheese, Bread
1 slice American cheese
2 slices white bread, Kaiser roll, or bread of choice
Preparation
Prepare sisig
Prepare the sisig by seasoning the diced pork belly with kosher salt. Heat an oiled, large, heavy bottomed pan on medium-high heat and cook the pork belly until browned and golden, then set aside. In the same pan, add the red onion and jalapenos in the remaining pork fat and cook until slightly softened and the onions are semi-translucent, about a couple minutes or so. Add the pork belly back in along with soy sauce, brown sugar, and calamansi or lime juice. Continue to sauté, mixing until the meat, vegetables, and sauce are all combined. Set aside in a bowl for assembly.
Toast bread
In a medium skillet, oven, or toaster, toast two slices of bread until golden brown and crisp on both sides. Set aside once toasted.
Prepare eggs
Heat a medium skillet with a generous drizzle of oil on medium-high heat. Crack eggs into the skillet and give it a mix the eggs and whites until the eggs and whites just come together. As it starts to firm up, form a patty the size of your bread. Sprinkle with just a touch of kosher salt, then add a slice of American cheese on top of the egg patty and continue to cook until the egg has fully cooked and the slice of cheese has softened and become melty, remove from skillet and set aside for assembly.

Assemble sandwich
Place one slice of toasted bread on a plate. Add the egg and melted cheese onto the bread, then scoop a couple spoonfuls of sisig and place on the egg. Top the sandwich with a slice of bread and give it a press down to seal, then enjoy fresh!! You'll probably have extra sisig which you can make another sandwich with or eat it with rice.
